Who doesn’t love a good, thick peanut butter cookie? My husband quickly devoured these cookies, as did all of his coworkers. If you’re looking for something easy to make for your spouse to take to work, then these are the cookies. They’re think, but also chewy and packed with peanut butter goodness.
Variations:
Hershey Kisses: Looking to balance out a little peanut butter with some chocolate on top, then go ahead and stick some on at the end of baking for peanut butter blossoms.
Reese’s Cups: Similar to adding Hershey’s kisses, you can pop on mini Reese’s cups right on top.
M&M’s: Another great option to add in would be M&M’s. Pop them in right after all ingredients are mixed together.
Crunchy Peanut Butter: Want a little crunch with your chew, go ahead and add in crunchy instead of smooth peanut butter. It’ll give you that crunch you’re craving.

- Preheat oven to 350 degrees and spray baking sheet with nonstick spray
- Cream together softened butter and brown sugar in large bowl. Once smooth, beat in egg, vanilla and peanut butter.
- Add in your flour and baking soda and mix until incorporated.
- Scoop and roll your dough into balls. Once all are made, you can roll each ball in your bowl of sugar. Place on pan, you can lightly press cookie down, but do not smash.
- Bake cookies for 7-8 minutes. Allow to cool for 5 minutes before transferring to wire rack.
Notes
- You can lightly press down with a fork right before baking to achieve that criss cross look on top.
